30 Minute Creamy Turmeric Chicken Vegetables and Rice

Ingredients
  • 600 g Boneless chicken cut into large cubes
  • 3 Garlic cloves crushed
  • 1 Large onion diced
  • 1.5 cup Spinach
  • 1/2 cup Chopped Basil Leaves
  • 1 Medium Courgette
  • 1 Pack Baby Corn
  • 2-3 Carrots peeled and sliced
  • 1.5 tsp Ginger (Fresh or powder)
  • 1/2 tsp Turmeric
  • 1/2 tsp Chilli flakes
  • 1 tbsp Honey
  • 1 tbsp Tamari or Soy Sauce
  • 2 tbsp Olive Oil
  • 2 tbsp Yogurt
  • Rice to serve
Instructions
  1. Start by frying the chicken with onions, garlic and all the spices in olive oil, in a large pot until all ingredients are browned. This should take about 5-8 minutes.
  2. Add the chopped carrots and courgette to the pot and sauté for 3 minutes before adding the baby corn, yogurt, honey, soy sauce and basil, along with 3 cups of water. Place the lid on the pot and allow to cook together on medium heat for 15 minutes.
  3. Once the vegetables are cooked to your liking, remove off the heat and mix in the roughly chopped spinach and it is ready to serve.
  4. Serve with rice and garnish with a sprinkle of sesame seeds and more basil leaves.
