Healthy 3 Ingredient No Bake Pistachio Baklava

Who would say no to baklava, especially when it is as healthy as this!

No refined sugar, no dough and no syrup. Filled with pistachios and dates which are so high in iron and fibre. The rose water completes it perfectly and resembles the rose water that is usually added to the syrup poured over baklava.

  • 1 1/4 cup Shelled Pistachios
  • 10 Medjoul Dates (15 if normal dates)
  • 1 tbsp Rose Water
  1. Place everything in a food processor for about 5 minutes until the mixture becomes as smooth as possible.
  2. Take the mixture and squeeze together with hands until its holding together like dough. Shape into a long roll, place on a large sheet of cling film, fold the clingfilm over it and start to roll and shape it into a long roll. Stop when happy with the thickness.
  3. Finally open the cling film, slice the roll into 3cm length pieces just like baklava, sprinkle some crushed pistachios on top and enjoy.
