We love chicken wings in this household and so I do go through periods where I make them pretty often. Pomegranate molasses wings have been on my list of recipes for a long time and they turned out so delicious. But then you can try them for yourself to decide.

Spicy Coriander and Pomegranate Chicken Wings

Prep Time 20 min Cook Time 45 min Rest Time 2 hour Total Time 3 hrs 5 mins Servings: 4

  1. Wash and dry the chicken wings completely.

  2. In a food processor, blend the marinade ingredients including the onions until completely smooth.

  3. Place the wings in a large bowl and coat completely with 3/4 of the marinade. Cover the bowl fully and place in the fridge for at least 24 hours.

  4. Place the wings in a lined tray and bake in the oven on gas 6 for 45 minutes or until cooked.

  5. Place the rest of the marinade in a small pan, and reduce/allow to bubble on low heat until it becomes a thick sticky sauce. Serve alongside the wings.

This recipe is perfect for a summers day BBQ, chuck the wings on a BBQ until cooked.

Fresh coriander seeds make a huge difference compared to powder, if you have it then freshly grind them but if you are pushed for time then powder is just fine.
