Here’s What I Ate In A Week As a Busy Mum – Quick & Simple Recipes. Not everything is included but most of it is. Some of these meals and portion sizes were also eaten over 2 days.

Lamb Chops – Onions, garlic, lamb chops, corn, rice, tomato sauce, salt, pepper and olive oil.

Sesame eggs – Sesame seeds, eggs, cheese, bread, cucumber and mayonnaise.

Black bean noodles – Store bought Breakfast spread – Turkey bacon, spring onions, mushrooms, eggs.

Japanese Curry – Cabbage, Carrots, Onions, Ginger, Garlic, curry cubes, Prawns and mushrooms. Served with rice.

It i true when the say Mothers cannot be sick. In reality we can but let’s be honest we don’t and can’t really rest as we should in order to recover. That is because everyone else in our household is our priority but ourselves. So i made this Immune Boosting Nutritious Asian Inspired Ramen   which was a treat.

Though I am now in a place where I feel like I have mastered the art of listening to my body and it’s needs through my cravings when I’m sick.

This week every molecule of my body craved exactly the feast I managed to put together and it was so good. It was warm and cosy, full of nutrients, it was delicious and filling.

We had happy hearts and bellies after this meal and I’m sure you will too after trying it.

Sharing with you a few days in my week. I put together a Charcuterie or grazing board with the delicious seasonal fruit I picked up from Costco, we than had some alone time and enjoyed that for dinner. We also enjoyed costco’s very fresh sushi. Visited a Korean supermarket with my sister and we tried some delicious drinks. This week was a fun week for my family and i as we had a Picnic On The Beach, went Thrifting Vintage Dishes & Made Zaatar Focaccia.

It was hard not to follow the current trend on social media and give making focaccia at home a try. Bread making is not something I dislike, I just feel that IT dislikes me and the process of it can make my life pretty miserable. Saying that I found focaccia the simpler of the bunch and if I can make it then you sure can too.

RECIPE

Ingredients

• 4 cups flour
• 11g or 3 teaspoons instant yeast
• 1 and 1/4 cup warm water
• 3/4 cup olive oil
• 1 teaspoon salt
• 1 tablespoon sugar
• 1/2 cup Zattar
• 1/2 cup olives Instructions

1. In a large bowl whisk the warm water with yeats for 10 seconds. Cover the bowl and set aside to activate for 10 minutes.
2. The yeast should have activated and be frothy, whisk for a few seconds and add the sugar, salt, flour and oil.
3. Mix to combine and once the consistency becomes too hard to whisk, transfer onto a clean surface and knead the dough until it all holds together.
4. Drench the same large bowl with olive oil, cover the bowl with a cloth or cling film and set aside in a warm environment to rise for 2 hours.
5. Fold the dough from each corner after 2 hours, transfer onto a clean surface, knead the dough and add the zaatar.
6. Repeat step 4 and allow to rise for another 2-4 hours.
7. Afte this I set mine in the fridge overnight to bake the following morning. But if you want to bake it on the same day, transfer the dough onto a greased baking dish and allow to rise again for 30 minutes.
8. Remove the cover, add more olive oil on top and dimple the dough. Sprinkle more Zaatar and add the olives.
9. Preheat the oven to 150c fan or gas mark 4 and bake in the oven until golden and crispy (appropriately 35-45minutes).
