Ingredients

For the Cheese Sauce

  • 60g Butter
  • 2 tablespoons all-purpose flour
  • 1 litre milk
  • 15 slices of processed cheese
  • 80g cheddar cheese
  • 50g Mozzarella (optional for the stretch)

The spices below are optional, I personally don’t use salt as the cheese adds a lot of salt

  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon cayenne pepper

Other Ingredients

  • Tortilla chips of your choice (I used a mix of classic and purple corn tortillas)
  • Fresh and easy Homemade Salsa (See here) OR store bought
  • Jalapeños

Step by Step

  1. In a medium saucepan, melt the butter over medium heat.
  2. Add the flour and whisk until smooth.
  3. Gradually add the milk, whisking constantly until the mixture is smooth and creamy.
  4. Add the shredded cheese, (salt, garlic powder, onion powder, and cayenne pepper are all optional) stirring until the cheese is melted and the sauce is smooth.
  5. Remove from heat and serve immediately.
