I love loaded hummus! I tried to change it up this time as Loaded Hummus with Grilled Halloumi. Honestly, it’s a dish to die for!

Homemade hummus is so creamy and smooth, simply spread it on your dish and top it with your favorite vegetables. I added red onions, cucumber, tomatoes, Aleppo pepper, fresh mint leaves, and olives. Grilled halloumi takes this dish to the next level!

What Is Hummus?

Hummus is a smooth creamy spread or dip made from chickpeas, lemon, tahini, and spices. It is famous in Middle Eastern cuisine.

You can find ready-made hummus in store-bought cans anywhere you go but it’s very easy to do at home. I’ll show you how!

I was inspired to make Loaded Hummus with Veggies and Grilled Halloumi from Shirazi salad. It’s light and delicious. Perfect for a summer refreshing meal!

Add some ice cubes to chickpeas to give hummus a beautiful light colour.

Ingredients

For the Hummus

  • Canned chickpeas
  • Tahini
  • Garlic cloves
  • Olive oil
  • Ice cubes
  • Cumin Seeds
  • Lemon juice
  • White pepper
  • Salt

For the Topping

  • Red onion
  • Tomato
  • Cucumber
  • Aleppo pepper
  • Fresh mint leaves
  • Grilled Halloumi
  • Extra virgin oil

Prepare Hummus, Veggies, and Grilled Halloumi

First, put the chickpeas in a pot and top them with water. When it starts boiling, bring it to a medium simmer for 45-60 minutes until the chickpeas become so tender and squishy. The skin should be easily removed.

Put them in a sieve and drain them to get rid of excess water. Remove as much skin as possible.

Toss the cooked chickpeas in a smoothie blender or food processor. Add tahini, cumin seeds, garlic cloves, lemon juice, ice cubes, pepper, and salt. Add half of the olive oil. Then, puree the chickpeas until there are no pieces or lumps.

While blending hummus, drizzle the rest of the olive oil in a continuous thin line. This will make your hummus super smooth.

If you do not have a lid with an opening, you can open the blender after all the chickpeas are pureed and add olive oil. Blend again till you get the consistency you desire.


Set your Plate

Spread some hummus on your plate.

Then, finely chop the red onion, tomato, cucumber, mint leaves, and Aleppo pepper and set them over the hummus.

Finally, top your dish with grilled halloumi. Enjoy!

    Why the ice cubes?

      They give the hummus a lighter cream colour instead of the dark beige and also because you need a little liquid to make it smooth and not completely solid

    how do I make grilled halloumi? This looks delish!

      Simply place your pan in a non stick or stainless steel pan and allow the halloumi slices to sizzle until golden brown and they they are ready to be served. 🙂
