Lahm Bi Siniya – Tray baked Kofta

This recipe is a Syrian dish called Lahma Bi Siniya. I was introduced to this through my Syrian friends and although I know that most of those who make this recipe make it without onion, I am s strong believer that onions give the kofta the moisture it needs in order to turn out soft and juicy.

The base of the tray is covered with a layer of peeled and thinly sliced potatoes, followed by the seasoned minced beef mixture and topped with slices of tomatoes and a generous drizzle of olive oil. The tomatoes also give out a lot of juice which soaks into the meat and it all turns out oh so delicious.

Ingredients
  • 1 kg Minced beef 80-20%
  • 2 Large onions minced finely
  • 6 clove Minced Garlic
  • 3 Medium potatoes peeled and Sliced
  • 1/3 cup Olive Oil
  • 2 tsp Arabic 7 spices
  • 2 tsp Allepo Pepper
  • 1 tsp Black Pepper
  • Salt to taste
  • Serve with rice
Instructions
  1. Place the minced beef in a large bowl, add the chopped onions, garlic, half of the olive oil and all the spices to the bowl and massage until well combined.

  2. Add the peeled and sliced potatoes to the base of a large casserole dish or a pyrex and cover the base fully.

  3. Split the meat mixture into four and place them in each corner of the dish and start flattening the meat to cover the potatoes fully. Make sure the meat reaches the edges of the dish.

  4. Using a large knife create cuts diagonally, so that the kofta pieces are cut before it bakes.

  5. Place a slice of tomato on top of each kofta piece. Drizzle the rest of the live oil and bake in a preheated oven on 160c fan for 45-50 minutes or until the potatoes are fully cooked.

  6. Serve with rice, salad and cucumber mint yogurt.
