Persian Saffron Joojeh Kebab


Heres the recipe to what seems like a difficult dish but actually a super easy yet delicious persian kebab.

Persian Saffron Joojeh Kebab

  1. Marinade the chicken cubes in diced onions, yogurt, lemon juice, saffron, olive oil and the spices over night or at least for a few hours.

  2. Thread the chicken cubes onto the skewers and place on the grill to cook. Do not overcook as the chicken can lose too much moisture and become dry. Bare in mind that he chicken will continue to cook on the inside once removed off the heat.

  3. Once removed off the heat, dip the sewers into melted butter, alternatively brush the skewers with melted butter and be generous.

  4. Grill the tomatoes on skewers until charred.

  5. To make saffron rice, brew a pinch of saffron in 5 tablespoons of hot water. Add white rice and a knob of butter. Mix well and dress the saffron rice on top of white rice.

  6. Serve everything together and enjoy.
