If you are not the biggest fan of caffeine, you can still enjoy this Tiramisu recipe! All you have to do is just substitute the instant coffee or espresso with decaf coffee.
Instead of mascarpone, you can use cream cheese, heavy cream or fresh ricotta cheese.
If you got time on your hands, you can make lady fingers from scratch. But the ones from the store are great too!

After you layer everything, dust with cocoa powder.
To double the recipe, use 5 large egg yolks.
Do not over whisk your cream and eggs mixture. Give a quick mix for about a minute until everything is combined.
Attention! Do not over-soak the lady fingers as they will become soggy. Give them a quick dip and you’re good to go!
Allow your tiramisu to chill in the refrigerator for at least 6 hours. Doing so will ensure a smoother cut.
Not only that, the longer the Tiramisu stays in the fridge, the more flavorful it becomes. So, prepare it ahead and keep it in the fridge overnight so all those delectable flavors are perfectly combined.
Bain Marie In Easy Steps!
Bain Marie, sometimes known as a double boiler, is a perfect technique to bake delicate dishes like custards and mousses. It surrounds the food being baked with gentle heat produced by the hot water around the bowl.
Choose a deep pan and add 3-4 centimeter water. It has to be large enough to fit a bowl inside.
Bring water to boil, then set it on medium heat. Slowly put the bowl inside so the water does not come in.
In the Tiramisu recipe, I set the sugar and egg yolks in the bowl. It is necessary to keep whisking because you do not want the egg yolks to cook. In the beginning, the mixture color is yellowish. Then, yellow disappears and it becomes white. You should not feel the sugar grains on your fingertip.
Make sure to remove the bowl from the Bain Marie as soon as baking is done; otherwise, it will continue to cook.

How to Make the Best Classic Tiramisu
Using the Bain Marie method, place a bowl in a pan containing 3-4 cm of boiling water. Keep it on medium heat.
In that bowl, add sugar and egg yolks. Whisk continually while on medium heat till sugar melts and combine with egg yolks. Once you no longer feel the sugar grains, then it is done. Set the bowl aside to cool.
Then, whisk your double cream to stiff peaks until it becomes like whipping cream. After that, add mascarpone, a dash of vanilla as well as the sugar and egg yolks mixture and give them a quick mix.
For the biscuit part, it is important to use high quality lady fingers. If you’re going to use instant coffee, add 4 tsp of instant coffee.
If you’re going for fresh brewed coffee, use 8 tsp of coffee granules which should make you about 400ml of liquid brewed coffee, and then add water. Once the coffee is ready, give your lady fingers a quick dip in there.
In a medium size, rectangular Pyrex put a layer of cream, and then do a layer of your coffee-dipped ladyfingers. After that, sprinkle a generous amount of cocoa powder. Keep doing that until you get to the top layer.
Finally, cover it and put it in the fridge for at least 6 hours. Serve and enjoy!
